Peru Lamas Andean Amazon 100% Dark Roast Chocolate – Recipe 283

The Lamas Province in the San Martín Region of northern Peru is home to Oro Verde, a cooperative of over 700 small farmers producing certified organic cacao. This Andean Amazon region produces fine flavor cacao with deep herbal notes that can include tannins reminiscent of green banana.

Creating flavorful 100% chocolate can be elusive.  Our Recipe 283 bar’s single ingredient, Lamas cacao, is dark roasted to enhance naturally occurring nutty notes and tannins. A medium conche cycle using heat and aeration softens harsh notes often associated with pure cacao.

This Lamas cacao is part of a 16 metric ton direct trade shipment.  As cacao importers, our friends at K'UL Chocolate bypass brokers, paying the cooperative directly, increasing the farm-gate price well above industry standards, providing more income to individual farmers.  We're pleased to bring you chocolate made from this very special cacao.
