Experience the taste of chocolate like never before as Rob and Amy share insights into chocolate making and explore how cocoa roast levels can influence chocolate flavor.  This 90-minute course includes two parts:

Part 1: Chuao Venezuela

The Chuao village in the northern coastal mountains of Venezuela is famous for its unique cacao.  Chocolate enthusiasts covet the pure, clean flavor notes while reminiscing on romantic visions of Chuao village ancestral courtyards where beans are carefully sun-dried. We’ve created four small batches of authentic Chuao chocolate using varying cocoa roast levels to highlight differing flavor notes.  In this class we will sample each Chuao variation and discuss flavor differences from cocoa roast changes.  You may actually help us select the roast level for our upcoming Chuao bar.    

Part 2: O’Payo Profundo, Nicaragua

O’Payo is an organic fine cacao variety from the Bosawas Natural Reserve in northern Nicaragua. Profundo describes a long fermentation and slow drying process, producing flavors of ripe fruits and nuts with floral notes. We’ve created four unique Nicaragua O’Payo Profundo chocolates to review during this class:

  • O’Payo 70% Light Roast
  • O’Payo 70% Medium Roast
  • O’Payo 70% Dark Roast
  • O’Payo 100% Medium Roast

You may be surprised at the dramatic flavor changes from different roast levels. These four bars will be available to the public later this summer.  You can be among the first to sample our latest work.

How the class works

  • Select the class and proceed to checkout when you're finished shopping.
  • The online class tasting kit will be sent to you. The kit includes four full size O’Payo bars (50g each) and four, 10g samples of Chuao 72% chocolate with different roast level.  We will also email you the Zoom link to access the online class.
  • During class, Rob and Amy from Fresco will lead the discussion and tasting for each chocolate as well as share insights into the chocolate making process. Everyone will have the chance to share their tasting experience.  If you sample the chocolate before class, make sure to save some for the event!
  • The online class is about 90 minutes - you're welcome to have multiple people sharing your screen and chocolate.

Make sure to sign up at least one week before the session to assure the tasting kit reaches you in time.
