The Lamas Province in the San Martín Region of northern Peru is home to Oro Verde, a cooperative of over 700 small farmers producing certified organic cacao. This Andean Amazon region produces fine flavor cacao with deep herbal notes that can include tannins reminiscent of green banana. 

The dark roasted cacao in our Recipe 282 bar develops notes of roasted nut with hints of wood, green fruit and herbs. A medium conche cycle using heat and aeration softens harsher notes, leaving the cacao's natural tannin finish. 

This Lamas cacao is part of a 16 metric ton direct trade shipment.  As cacao importers, our friends at K'UL Chocolate bypass brokers, paying the cooperative directly, increasing the farm-gate price well above industry standards, providing more income to individual farmers.  We're pleased to bring you chocolate made from this very special cacao.
