Roasting is the next essential step. It develops and enhances the complex flavors fermentation begins—transforming raw cocoa into the expressive, nuanced foundation of artisan chocolate.

Numerous scientific journals have mapped out the chemistry behind cocoa roasting in impressive detail—but we won’t drag you through a maze of Maillard reactions and volatile compounds (tempting as that may be). Instead, let’s nerd out just enough to appreciate how different roast levels shape flavor—and why it matters.


Roast Profiles: Light, Medium, and Dark

Every cocoa batch is roasted with purpose. Different roast levels bring out different flavor profiles:

  • Light Roast
    Softens raw cocoa’s acidic or green edge. Often reveals delicate, fruity, or floral notes.
  • Medium Roast
    Balanced and flavorful. Brings out classic cocoa character—nutty, creamy, wine-like.
  • Dark Roast
    Bold and intense. Unlocks smoky, rich, nutty or spicy notes. Some lighter flavors may fade, while new ones emerge.

There’s no single “right” roast level. Cocoa genetics, origin, harvest timing, and fermentation style all influence how a bean responds to roasting. Chocolate makers use carefully chosen roast levels to coax the best from each harvest.

Often, different roast profiles can produce dramatically different flavors from the same cocoa. While some chocolate makers settle on a single roast profile, others choose to explore and share multiple roast levels—each highlighting a unique expression of the same bean.
