Chocolate form Puerto Rico cocoa

We recently received an intriguing sample of Puerto Rico cocoa beans from our friends at Uncommon Cacao. This is the first time we've tested cocoa from this origin. We had enough to create a 2-pound test batch of 70% chocolate. After tempering and letting the flavors develop for a couple of weeks, we noticed subtle notes of tobacco and wood.
