Crafted from organic cocoa beans sourced from the Polochic Valley in Guatemala, this artisan chocolate bar is pure in its simplicity. Lightly roasted cocoa nibs, ground, refined, and conched to perfection. With no added ingredients, this chocolate delivers an unfiltered expression of its origin. An intense chocolatey start gives way to subtle citrus notes, including hints of lemon zest, creating a remarkably smooth and refined 100% dark chocolate experience. A long conche cycle softens the natural intensity of the cacao, resulting in a bold yet approachable flavor.

About the Farmers
The cacao is cultivated by the Asociación Integral de Pequeños Productores Agroforestales de la Sierra de las Minas (ASIPASM), comprising 177 Q’eqchi’ Maya smallholder farming families across seven communities in the lush Polochic Valley of southeastern Alta Verapaz. These communities are situated on the slopes of the Sierra de las Minas Biosphere Reserve, overlooking the fertile Polochic Valley.
ASIPASM was formed to reforest areas historically used for corn and bean production through cacao agroforestry and the establishment of timber and banana trees. To ensure high-quality processing, the association operates a fermentation house, drying decks, a drying patio, and a warehouse in the village of Jolomijix (ho-lo-mee-heesh). They conduct regular accounting of their production costs and aim to grow as a long-term market partner for the remote communities around the Sierra de las Minas. This dedication results in a balanced flavor profile reminiscent of rich chocolate cake, candied peanuts, and dried cherry.
Indulge in the craftsmanship and rich flavors of this artisan dark chocolate—a true testament to quality, sustainability, and the artistry of fine chocolate-making.
