During this interactive 90-minute tasting class, we'll travel through several cocoa-growing regions around the world, learning how differences in soil, rainfall, temperature, and post-harvest processing create unique flavor profiles in chocolate. Along the way, we'll taste a selection of single-origin chocolates made from cocoa beans grown in these regions and discuss the flavors that make each one distinctive.

We'll also pull back the curtain on the chocolate making process itself. You'll learn the basic steps of transforming cocoa beans into finished chocolate and discover how decisions made by chocolate makers—especially roasting—can dramatically influence flavor.
