Venezuela CHUAO 82% Light Roast Chocolate - LIMITED

This 82% Chuao, Venezuela chocolate is our interpretation of the purest Chuao flavors.  

The cacao is very lightly roasted to develop complex, slightly fruity flavors reminiscent of crème fraîche. Days of stone grinding produce a silky texture. A minimal amount of natural cane sugar is added to reduce bitterness, allowing the pure Chuao flavor notes the self-expression they deserve.  A pinch of additional cocoa butter helps flavors disperse subtly as the chocolate melts on your palate.

Finally, heat with aeration reduces any undesired flavor notes remaining from the roasting step. This is conching. We hope our interpretation of this coveted cacao exceeds your expectations.
