Ghana 100% Light Roast Chocolate – Recipe 235
Ghana’s ABOCFA is one of four Organic/Fair Trade farmer cooperatives in Ghana - known for producing the highest quality traceable cacao in the region. We created a 100% chocolate from this cacao to experience the pure flavors from this amazing origin. The light roasted cacao in our Recipe 235 bar highlights the natural acidity of this cacao uncovering flavors reminiscent of berries and nuts. Next, the chocolate is heated, mixed and aerated, this is conching. Our subtle conche step slightly mellows the cacao’s natural acidity resulting in chocolate with balanced, complex flavors.
