This extraordinary artisan dark chocolate began its journey a decade ago at the Markham Plantation in eastern Papua New Guinea, a region renowned for its rich volcanic soil, heavy rainfall, and meticulous post-harvest techniques. Here, cacao underwent a five-day wood box fermentation followed by wood-fired drying, creating a foundation of complex flavors—tropical fruit, green banana, smoky, and earthy notes.
In 2014, we received the final cocoa harvest from Markham Plantation before the land was repurposed for other crops. Recognizing its rare quality, we reserved a small amount of this chocolate in bulk, allowing it to age for ten years. Over time, aging has refined and mellowed the flavors, enhancing depth while softening sharper notes. Now, a decade later, we have carefully tempered and molded this rare 2014 Reserve chocolate, unveiling a one-of-a-kind tasting experience.
