Venezuela CHUAO 72% Blended Roast Chocolate - LIMITED

We spent some time attempting to create a Chuao chocolate to appropriately represent this bean's heritage. After several experiments with different cacao percentages, roast levels and conche profiles, we were pleased with the results from combining chocolate made with varied cacao roast levels. A light and medium roast combination creates complexity. Adding a small amount of dark roasted Chuao chocolate adds depth and intensity, similar to adding seasoning to some foods.  The result is our 72% blended roast, subtle conche Chuao chocolate.  We hope our interpretation of this coveted origin exceeds your expectations.

The Chuao village in the northern coastal mountains of Venezuela is famous for its unique cacao. Chocolate enthusiasts covet the pure, clean flavor notes while reminiscing on romantic visions of Chuao village ancestral courtyards where beans are carefully sundried. We were fortunate to receive a small amount of authentic Chuao village cocoa beans.
