Homemade Chocolate Pudding

This super rich and creamy pudding has been a favorite recipe in our family for over 30 years. We upscaled it with craft chocolate Medallions.
Preparation time: 10 minutes        Cooking time: 20 minutes  



2/3 cups sugar
4 TBSP cornstarch
¼ tsp salt
4 cups milk
4 egg yolks, slightly beaten
4 TBSP butter, softened
4 tsp vanilla
9 oz. Fresco Chocolate Medallions



Mix sugar, cornstarch and salt in saucepan.  Stir in milk gradually.  Cook over medium heat, stirring constantly, until mixture thickens and boils.  Don’t rush the boil step or your pudding will not set up correctly.  Boil and stir 1 minute.  Pour and stir at least half of the hot mixture gradually into egg yolks.  Blend egg mixture back into saucepan mixture to combine.  Boil and stir 1 minute.  Remove from heat.  Stir in butter, vanilla and chocolate.  Cool.  To avoid the crusty top layer that happens when cooling, place plastic wrap on top of the pudding.
