Lamas Andean Amazon, Peru, 74% Medium Roast Chocolate – Recipe 280
The Lamas Province in the San Martín Region of northern Peru is home to Oro Verde, a cooperative of over 700 small farmers producing certified organic cacao. This Andean Amazon region produces fine flavor cacao with deep herbal notes that can include tannins reminiscent of green banana.
The medium roasted cacao in our Recipe 280 bar develops notes of green fruit with hints of bitter herbs. This bar has no conche (no added heat and aeration after refining) which preserves the cacao fruit's natural flavors. You may experience notes of sour green fruit with a slight acidic sweetness and pronounced natural tannins.
This Lamas cacao is part of a 16 metric ton direct trade shipment. As cacao importers, our friends at K'UL Chocolate bypass brokers, paying the cooperative directly, increasing the farm-gate price well above industry standards, providing more income to individual farmers.
