O'Payo is an organic fine cocoa variety from the Waslala municipality, within the Bosawas Natural Natural Reserve in the northern mountains of Nicaragua. Profundo describes a long fermentation and slow drying process, producing flavors of ripe fruit and nuts with floral and spicy notes.
Creating flavorful 100% chocolate can be elusive. We wanted to develop a pure cacao with bold character that was also approachable. We think you will be pleased with the results. This bar's single ingredient, Nicaragua, O'Payo Profundo cocoa, is treated with a medium roast to highlight naturally occurring flavors of nuts and spice.
